A tasty recipe from our Lifestyle Rider

Im going through a little carob phase and experimenting with some things that I see in the health food store. This one is one of my favourites and has absolutely no added sugar, great fats and is some how still so satisfying! You do have the option to drizzle a little honey over the top or even change the carob to cacao (it will be more bitter though).

Ingredients:

100g shredded coconut

25g desiccated coconut

50g (1/2 cup) coconut oil melted

2 tbsp sesame seeds

2 tbsp pure carob powder

1 tbsp mesquite powder

pinch salt 

1 tsp vanilla essence 

1/4 tsp of cinnamon

Mix ingredients until well combined evenly. You can try and roll them into balls but I found by evenly pressing into a square container with a sheet of baking paper did the trick. Place in freezer for 15 min, cut, serve, break and eat how you like!

Cait is a 22 year old photographer hailing from the Mornington Peninsula, Victoria, Australia.

Having recently completed a Bachelor of Photography at Melbourne's RMIT University, her skills with the lens are innovative and fresh, always searching for that point of difference in a photograph.

Her biggest aspiration is to shoot women in the surf industry, capturing the growing femininity and style out in the water. Its an organic love for the ocean + desire to travel the world and capture real moments, that fuels Caits photography.
